If you don&#8217;t usually buy cake flour, make the exception here. It&#8217;s sold in the baking aisle with the other flours. You can use leftovers in any of these <a href=\"https:\/\/sallysbakingaddiction.com\/tag\/cake-flour\/\" rel=\"noopener\">cake flour recipes<\/a>. If you can&#8217;t find it, try making this <a href=\"https:\/\/sallysbakingaddiction.com\/cake-flour-substitute\/\" rel=\"noopener\">cake flour substitute<\/a>.<\/li>\n\n\n\n<li><strong>Egg Whites: <\/strong>Egg yolks are wonderful for moisture, but they&#8217;re heavy and weigh down cakes. We use whole eggs in my coconut <a href=\"https:\/\/sallysbakingaddiction.com\/coconut-easter-cake\/\">Easter cake<\/a> which is much more dense, like a pound cake. To keep this coconut cake light and fluffy, use only egg whites. We&#8217;ll add the moisture back in with sour cream.<\/li>\n\n\n\n<li><strong>Sour Cream: <\/strong>The moist maker! This cake melts in your mouth.<\/li>\n\n\n\n<li><strong>Coconut Extract: <\/strong>I tested this recipe with and without coconut extract. We loved it both ways, but coconut extract is necessary for best coconut flavor. It&#8217;s in the baking aisle near the vanilla extract.<\/li>\n\n\n\n<li><strong>Canned Coconut Milk: <\/strong>Canned coconut milk is a cooking ingredient, not a beverage. It&#8217;s creamier and thicker than regular milk and usually found near the Thai food products. Do not use the refrigerated coconut milk beverage that comes in a carton, because the two are very different.<\/li>\n\n\n\n<li><b>Sweetened Shredded Coconut: <\/b>I recommend using sweetened shredded coconut, also called sweetened flaked coconut. It&#8217;s moister than unsweetened coconut and that makes a big difference in the cake&#8217;s texture. I reduced the added sugar in the cake batter to make up for the sweetness. Sweetened coconut is sometimes sold as long skinny shreds, a size some find off-putting in cake. Sounds obvious, but even the tiniest bit of warmth will melt the frosting. As a result, the layer cake will slip, slide, or even cave in!<\/li>\n\n\n\n<li>If your cakes have a dome on top, level them off with a cake leveler or serrated knife. Flat-topped cakes ensure a straight and sturdy layer cake.<\/li>\n\n\n\n<li>Choose a serving plate, <a href=\"https:\/\/amzn.to\/3O6b3ny\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">cake turntable<\/a>, or cake stand. The exact cake stand I use in these pictures is no longer available, but here is a <a href=\"https:\/\/rstyle.me\/+W1wD1rdLv4iu5QQXF6SvNA\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">similar option<\/a>. <\/li>\n\n\n\n<li>Place the bottom layer on the cake stand. Using an <a href=\"https:\/\/amzn.to\/2UMzQSc\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">icing spatula<\/a>, spread 1 and 1\/2 cups of frosting in an even layer on top. Bring the frosting just over the edge of the cake; this will be helpful when it&#8217;s time to frost the sides.<\/li>\n\n\n\n<li>Place the second layer top-side-down on top. Make sure it aligns with the bottom cake layer.<\/li>\n\n\n\n<li>Spread 1 and 1\/2 cups frosting evenly on top, just as you did with the bottom layer.<\/li>\n\n\n\n<li>Place third layer top-side-up on top. Again, make sure it&#8217;s perfectly aligned.<\/li>\n\n\n\n<li>Divide the remaining frosting in half. (Just eyeball it.) Dollop half of the frosting on top of the cake and use an icing spatula to smooth it to the edges. Apply *some* of the remaining frosting all around the sides of the cake, then use a <a href=\"https:\/\/amzn.to\/4dikUEk\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">bench scraper<\/a> to smooth it in a thin layer. This was her first time making &#8220;3D&#8221; buttercream roses and look how beautifully they turned out! She made the buttercream roses at my house and I froze them until it was time to decorate the coconut cake. She followed <a href=\"https:\/\/www.youtube.com\/watch?v=5-4GhfdxWwI\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">this video tutorial<\/a>. Keep in mind that the cream cheese buttercream WILL NOT work for the intricate buttercream roses. Instead, use my <a href=\"https:\/\/sallysbakingaddiction.com\/vanilla-buttercream\/\" rel=\"noopener\">vanilla buttercream<\/a> and add 1 extra cup of confectioners&#8217; sugar. You need <strong>very stiff<\/strong> buttercream for these roses. You also need small squares of parchment paper and:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><a href=\"https:\/\/amzn.to\/2CTGVdj\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">Wilton Petal Tip 104<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/amzn.to\/3o0ql5J\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">Flower Nail<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/amzn.to\/3e6ooA9\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">Reusable Piping Bags<\/a> or <a href=\"https:\/\/amzn.to\/30JGnVO\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">Disposable Piping Bags<\/a> <\/li>\n<\/ul>\n\n\n\n<p>Loosely cover the roses, then freeze or refrigerate them until ready to decorate, up to 1 week. No need to thaw prior to decorating the cake. Peel off parchment square and place the buttercream rose on the cake. For best success, I recommend using fresh eggs instead of carton egg whites. Here are all my <a href=\"https:\/\/sallysbakingaddiction.com\/tag\/egg-yolks\/\">recipes using leftover egg yolks<\/a>. <em>Success tip: Eggs separate much easier when they\u2019re cold.<\/em><\/li>\n<li><strong>Canned Coconut Milk:<\/strong> Canned coconut milk is a cooking ingredient, not a beverage. Do not use refrigerated carton coconut milk beverage. You need 1 cup for the cake, not the entire can. You use 2 more Tablespoons in the frosting.<\/li>\n<li><b>Sweetened Shredded Coconut: <\/b>I recommend using sweetened shredded\/flaked coconut. It&#8217;s moister than unsweetened coconut and that makes a big difference in the cake&#8217;s texture. If desired, pulse the coconut shreds in a food processor to chop them up so they aren&#8217;t as long inside and outside of the cake. Chopping the coconut is optional.<\/li>\n<li><strong>Cream Cheese:<\/strong> Use brick cream cheese, not cream cheese spread. If desired, you can use this <a href=\"https:\/\/sallysbakingaddiction.com\/vanilla-cake\/\">vanilla buttercream<\/a> instead (no cream cheese). Use canned coconut milk instead of milk and add 1\/2 teaspoon coconut extract.<\/li>\n<li><strong>9&#215;13-Inch Sheet Cake:<\/strong> Simply pour the batter into a greased and lightly floured <a href=\"https:\/\/amzn.to\/3iSyt1u\" target=\"_blank\" rel=\"nofollow noopener sponsored\">9&#215;13-inch pan<\/a> and bake for 40 minutes or until a toothpick inserted in the center comes out clean.<\/li>\n<li><strong>2-Layer Cake:<\/strong> Prepare two 9-inch cake pans in step 1.
