Combine with melted butter and sugar, then press tightly into a <a href=\"https:\/\/amzn.to\/2G3hp5U\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">pie dish<\/a>.<\/li>\n\n\n\n<li><strong>Pre-Bake the Crust:<\/strong> Pre-bake the crust before pouring in the key lime filling. Pre-baking solidifies the crust and allows for easy slicing once the pie is ready to serve.<\/li>\n\n\n\n<li><strong>Make the Filling: <\/strong>Whisk together the 3 filling ingredients\u2014it will be thick! It&#8217;s the most wonderful crunchy, sweet, and buttery bed for the fresh key lime filling. But you won&#8217;t believe the difference macadamia nuts make. I use about 1\/2 cup of macadamia nuts in place of some of the graham cracker crumbs and the result is <strong>pure pie bliss<\/strong>.<\/p>\n\n\n\n<p class=\"has-text-align-left\">You need 4 ingredients for this crust:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Macadamia Nuts<\/strong> <em>(I recommend salted)<\/em><\/li>\n\n\n\n<li><strong>Graham Crackers<\/strong><\/li>\n\n\n\n<li><strong>Melted Butter<\/strong><\/li>\n\n\n\n<li><strong>Sugar<\/strong><\/li>\n<\/ol>\n\n\n\n<p class=\"has-text-align-left\">Pulse the macadamia nuts with graham crackers, then mix with melted butter and sugar. These 3 ingredients are equally important. Why? The filling works because the acidity of key lime juice naturally thickens sweetened condensed milk, while egg yolks help set the filling into a smooth, sliceable custard as it bakes and chills.<\/p>\n\n\n\n<p>If you&#8217;ve tried my <a href=\"https:\/\/sallysbakingaddiction.com\/key-lime-pie-bars\/\">key lime pie bars<\/a> or <a href=\"https:\/\/sallysbakingaddiction.com\/key-lime-pies\/\">mini key lime pies<\/a>, you&#8217;ll notice that today&#8217;s filling is a little different. I typically add a little cream cheese to those recipes for stability and structure. However, for a smooth and sliceable custard pie, we&#8217;ll skip it.<\/p>\n\n\n\n<p><strong>My success tip:<\/strong> Do yourself a favor and buy a bottle of key lime juice from the store. There&#8217;s a brand of bottled key lime juice that I love called Nellie &amp; Joe&#8217;s in most major grocery stores next to the bottled lemon juice. Otherwise you will spend 100 years juicing 500 tiny key limes yourself. LOL. You need 1 cup (240ml) of key lime juice. It&#8217;s tricky to know when the pie is done, but here&#8217;s my secret: bake the pie until the filling is only <strong>slightly jiggly<\/strong> in the center (about 18\u201320 minutes). It should be firm to the touch, but not totally solid. The pie will continue to set as it cools.<\/p>\n\n\n\n<p>Cool the pie completely on a cooling rack, then cover and refrigerate for at least 1 hour before garnishing, slicing, and serving.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">How to Decorate Key Lime Pie<\/h2>\n\n\n\n<p class=\"has-text-align-left\"><em>Let the refreshing citrus flavor stand out, and keep the garnishes simple.<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Homemade <a href=\"https:\/\/sallysbakingaddiction.com\/homemade-whipped-cream\/\" rel=\"noopener\">whipped cream<\/a>; in the pictured pie, I used <a href=\"https:\/\/amzn.to\/4e4g5zq\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">Ateco 826<\/a> which is a large piping tip.
