I use that sugar cookie dough for nearly all of my shaped sugar cookies and you can find them all on the new <a href=\"https:\/\/sallysbakingaddiction.com\/category\/desserts\/cookies\/cut-out-cookies\/\">Cut Out Cookies<\/a> page. Loved by many, the sugar cookies are soft, thick, hold their shape in the oven, and have a flat surface ready for decorating. It&#8217;s a classic recipe that&#8217;s simple yet easily versatile, like <a href=\"https:\/\/sallysbakingaddiction.com\/simply-perfect-vanilla-cupcakes\/\">vanilla cupcakes<\/a> (another favorite!). Today&#8217;s recipe is the same as my sugar cookies recipe only you&#8217;ll add vanilla bean and we&#8217;re taking a small step away from traditional royal icing, too.<\/p>\n\n\n\n<p><strong>For today&#8217;s shamrock cookies:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Vanilla Bean:<\/strong> Add the seeds scraped from 1 whole vanilla bean. If you can&#8217;t find vanilla bean in your grocery store, you can order some online. I use and love <a href=\"https:\/\/amzn.to\/3tENbPB\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">these exact vanilla beans<\/a>\u2014and they&#8217;re usually what I use for <a href=\"https:\/\/sallysbakingaddiction.com\/homemade-vanilla-extract\/\">homemade vanilla extract<\/a> and <a href=\"https:\/\/sallysbakingaddiction.com\/homemade-vanilla-sugar\/\">homemade vanilla sugar<\/a> too.<\/li>\n\n\n\n<li><strong>Optional Vanilla Sugar: <\/strong>Speaking of homemade vanilla sugar&#8230; have you ever used it in baking before? Today&#8217;s recipe is the perfect place for <a href=\"https:\/\/sallysbakingaddiction.com\/homemade-vanilla-sugar\/\">vanilla sugar<\/a> because this type of sugar is best used in recipes where vanilla is the prominent flavor. Just use it as a 1:1 replacement for regular granulated sugar. It&#8217;s optional though; while I&#8217;ve made these sugar cookies with vanilla sugar before, I didn&#8217;t use it in today&#8217;s pictured cookies.<\/li>\n\n\n\n<li><strong>Cookie Cutter:<\/strong> You can use today&#8217;s vanilla bean sugar cookie dough with any cookie cutter. For the shamrocks, I used the medium and small cookie cutters from this exact <a href=\"https:\/\/amzn.to\/3sOA8M7\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">shamrock cookie cutter set<\/a>. I know the store Michaels carries shamrock cookie cutters and if you want to purchase a single shamrock cookie cutter, <a href=\"https:\/\/amzn.to\/3KmEj7L\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">this 3-inch size<\/a> is a great option.<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading heading-star\">The Trick is the Order of Steps<\/h2>\n\n\n\n<p>After the cookie dough comes together, roll the dough out and chill the rolled out sections of dough. Cut the chilled dough into shamrocks or other shapes and then bake.<\/p>\n\n\n\n<p><strong>Notice how I roll out the dough BEFORE chilling it in the refrigerator?<\/strong> <\/p>\n\n\n\n<p>That\u2019s the trick and let me explain why it works. To prevent the cookies from over-spreading, the cookie dough must be refrigerated first. Roll the dough out right after you prepare it and then chill it. (At this point the dough is too soft to cut into shapes.) Don\u2019t chill the cookie dough and then try to roll it out because it will be too cold and stiff to roll. I divide the dough in half before rolling it out and highly recommend you do the same because smaller sections of dough are a lot easier to handle.<\/p>\n\n\n\n<p>I do this any time I make sugar cookies, for any occasion like these <a href=\"https:\/\/sallysbakingaddiction.com\/valentines-day-heart-sugar-cookies\/\">Valentine&#8217;s Day cookies<\/a>, <a href=\"https:\/\/sallysbakingaddiction.com\/easter-cookies\/\">Easter cookies<\/a>, <a href=\"https:\/\/sallysbakingaddiction.com\/fireworks-celebration-cookies\/\">fireworks cookies<\/a>, and <a href=\"https:\/\/sallysbakingaddiction.com\/christmas-sugar-cookies\/\">Christmas sugar cookies<\/a>. Pick it up, put it on a baking sheet, and place it in the refrigerator. If you don\u2019t have enough room for two baking sheets in your refrigerator, stack the pieces of rolled out dough on top of each other. And like the sugar cookies, the frosting includes vanilla bean.<\/p>\n\n\n\n<p>We also love these with <a href=\"https:\/\/sallysbakingaddiction.com\/salted-caramel-frosting\/\">salted caramel frosting<\/a> spread on top.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Decorating St. Patrick&#8217;s Day Cookies with Buttercream<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>This frosting doesn&#8217;t really crust:<\/strong> Though the frosting somewhat sets, it doesn&#8217;t fully crust. If you prefer a crusting buttercream, you can replace half of the butter with shortening.<\/li>\n\n\n\n<li><strong>You can tint this frosting:<\/strong> Feel free to tint the vanilla bean buttercream. So the buttercream maintains its consistency, I recommend gel food coloring. I used Americolor leaf green. Though I will say that I loved how the cookies with uncolored buttercream looked because you can really see the vanilla bean specks!<\/li>\n\n\n\n<li><strong>Make it two-toned: <\/strong>Do you remember when I showed you how to make <a href=\"https:\/\/sallysbakingaddiction.com\/how-to-pipe-a-two-toned-frosting-rose\/\">two-toned frosting<\/a> roses? Some of the pictured shamrock cookies have two-toned green buttercream. To do that, spoon 2 or more colors of buttercream into your piping bag. I used uncolored buttercream (white-ish) and green. When you pipe, the colors will swirl together and each frosted cookie will look different. Very pretty!<\/li>\n<\/ul>\n\n\n\n<p>To easily fill a piping bag with frosting, fit the piping bag into a tall cup first. Set aside.<\/li>\n<li id=\"instruction-step-2\">In a large bowl using a <a href=\"https:\/\/amzn.to\/3dBQItB\" target=\"_blank\" rel=\"nofollow noopener sponsored\">handheld<\/a> or a <a href=\"https:\/\/amzn.to\/3QsPcbD\" target=\"_blank\" rel=\"nofollow noopener sponsored\">stand mixer<\/a> fitted with a paddle attachment, beat the butter and sugar together on high speed, about 3 minutes. <i>(Here\u2019s a helpful tutorial if you need guidance on\u00a0<a href=\"https:\/\/sallysbakingaddiction.com\/how-to-cream-butter-and-sugar\/\" rel=\"\">how to cream butter and sugar<\/a>.)<\/i> Add the vanilla bean seeds and beat again until combined and butter is creamy, about 1-2 more minutes. Add the egg and vanilla extract and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.<\/li>\n<li id=\"instruction-step-3\">Add the dry ingredients to the wet ingredients and beat on low speed until combined. Dough will be a bit soft. If the dough seems too soft and sticky for rolling, add 1 more Tablespoon of flour.<\/li>\n<li id=\"instruction-step-4\">Divide the dough into 2 equal portions. Place each portion on a piece of lightly floured parchment paper or a lightly floured silicone baking mat. With a lightly floured rolling pin, roll the dough out to about 1\/4-inch thickness. Use more flour if the dough seems too sticky. The rolled-out dough can be any shape, as long as it is evenly 1\/4-inch thick.<\/li>\n<li id=\"instruction-step-5\">Lightly dust one of the rolled-out doughs with flour. Place a piece of parchment on top. (This prevents sticking.) Place the 2nd rolled-out dough on top. Cover with plastic wrap or aluminum foil and then refrigerate for at least 1-2 hours and up to 2 days.<\/li>\n<li id=\"instruction-step-6\">Once chilled, preheat oven to 350\u00b0F (177\u00b0C). Line 2-3 large baking sheets with parchment paper or silicone baking mats. Carefully remove the top dough piece from the refrigerator. If it&#8217;s sticking to the bottom, run your hand under it to help remove it. Using a cookie cutter, cut the dough into shapes. Re-roll the remaining dough and continue cutting until all is used. Repeat with 2nd piece of dough. (Note: It doesn&#8217;t seem like a lot of dough, but you get a lot of cookies from the dough scraps you re-roll.)<\/li>\n<li id=\"instruction-step-7\">Arrange cookies on baking sheets 3 inches apart. Bake for 11-12 minutes or until lightly browned around the edges. If your oven has hot spots, rotate the baking sheet halfway through bake time. Allow cookies to cool on the baking sheet for 5 minutes and then transfer to a wire rack to cool completely before decorating.<\/li>\n<li id=\"instruction-step-8\"><strong>Make the buttercream frosting:<\/strong> With a handheld or stand mixer fitted with a paddle attachment, beat the butter and vanilla bean seeds together on medium speed until butter is creamy, about 2 minutes. Add confectioners\u2019 sugar, heavy cream, and vanilla extract. Beat on low speed for 30 seconds and then increase to medium-high speed and beat for 2 full minutes. Taste. Add a pinch of salt if frosting is too sweet. To color the frosting, divide the frosting between 2-3 bowls (or however many colors of frosting you want). Stir in 1-2 tiny drops of gel food coloring (or more, depending on your desired color).<\/li>\n<li id=\"instruction-step-9\"><strong>Frost the cooled cookies:<\/strong> You can decorate the cookies with a knife, icing spatula, or use a piping bag and piping tip. Top with sprinkles, if desired. In the pictured cookies, I filled a piping bag with spoonfuls of both green and uncolored frosting and used <a href=\"https:\/\/amzn.to\/3sLsz8Z\" target=\"_blank\" rel=\"nofollow noopener sponsored\">Ateco 30 piping tip<\/a>. Pipe hearts as the 3 leaves and a line as the stem.<\/li>\n<li id=\"instruction-step-10\">Frosting does not harden or crust very much, though you could gently stack 1 frosted cookie on top of another, but expect some slight squishing. Store frosted cookies covered at room temperature for up to 1 day or in the refrigerator for up to 1 week. Store unfrosted cookies covered at room temperature for up to 5 days or in the refrigerator for up to 1 week.<\/li>\n<\/ol>\n\t\t\t<\/div>\n\t\t<\/div>\n\t\n\t\n\t\t\t<hr style=\"border-color: #BEB9B7 !important; background-color: #BEB9B7 !important;\" data-tasty-recipes-customization=\"secondary-color.border-color secondary-color.background-color\">\n\t\n\t\n\t\n\t\t\t<div class=\"tasty-recipes-notes\">\n\t\t\t<h3 style=\"color: #010101 !important;\" data-tasty-recipes-customization=\"h3-color.color h3-transform.text-transform\">Notes<\/h3>\n\t\t\t<div class=\"tasty-recipes-notes-body\" style=\"color: #010101 !important;\" data-tasty-recipes-customization=\"body-color.color\">\n\t\t\t\t<ol>\n<li><strong>Freezing Instructions:<\/strong> Plain or frosted sugar cookies freeze well up to 3 months. Thaw in the refrigerator or at room temperature. You can also freeze the cookie dough for up to 3 months before rolling it out. Prepare the dough through step 3, divide in half, flatten both halves into a disk as we do with <a href=\"https:\/\/sallysbakingaddiction.com\/baking-basics-homemade-buttery-flaky-pie-crust\/\">pie crust<\/a>, wrap each in plastic wrap, and then freeze. To thaw, thaw the disks in the refrigerator and then bring to room temperature for about 1 hour. If the dough is too sticky, your butter may have been too soft. Room temperature butter is actually cool to the touch. You can read more about it in this <a href=\"https:\/\/sallysbakingaddiction.com\/room-temperature-butter\/\">room temperature butter<\/a> post. Room temperature egg is preferred so it&#8217;s quickly and evenly mixed into the cookie dough.<\/li>\n<li><strong>Vanilla Bean: <\/strong>This recipe calls for the seeds from 1 whole <a href=\"https:\/\/amzn.to\/3tENbPB\" target=\"_blank\" rel=\"nofollow noopener sponsored\">vanilla bean<\/a> in the cookie dough and from 1\/2 of a vanilla bean in the frosting. (For extra flavor, feel free to use 1 whole bean in the frosting too.) To get the seeds out of a vanilla bean, use a small knife to cut the vanilla bean lengthwise and then use the dull side of the knife to scrape out the vanilla seeds.<\/li>\n<li><strong>Using Vanilla Bean Paste Instead: <\/strong>If you have <a href=\"https:\/\/amzn.to\/3v6wfpL\" target=\"_blank\" rel=\"nofollow noopener sponsored\">vanilla bean paste<\/a>, you can use that instead of vanilla bean. Add 1 teaspoon vanilla bean paste when you add the vanilla extract.
