Deb, I used 3 T. of Crème de Menthe. I also used lots of peppermint extract in the crust (1/2 t.), ganache (1/2 t.), filling (2 t.), topping (1/2 t.), let it chill for two days. It was perfect. And the shaved chocolate (1/2 t. peppermint).

I remade this omiting the tomato paste, increasing the chicken broth to 4 cups and added a little more cream.
