Deb, I used 3 T. of Crème de Menthe. I also used lots of peppermint extract in the crust (1/2 t.), ganache (1/2 t.), filling (2 t.), topping (1/2 t.), let it chill for two days. It was perfect. And the shaved chocolate (1/2 t. peppermint).

So good! I used Crème de Menthe instead of the syrup, doubled the peppermint extract and used it everywhere, in the crust, ganache, filling, and even the whipped cream topping. It could not have been better!

We do have plenty of that but no syrup. I may add tablespoon by tablespoon and see how it tastes and if it needs some sugar.

We didn’t care for it. The chocolate crust completely overpowered the mint filling. All we could taste was chocolate so if that’s your thing you might like it. The crust was also really hard after refrigerating. The first pieces we pulled out were fine but after staying overnight in the fridge it became a rock. Probably won’t be making this again.

I feel like it had a great crème de menthe flavor. When I was young (back in the very early 80’s) I used to stay overnight at my grandparents house. They always had Andes mints. I think it would have been much better with just peppermint extract.
